Yasmin shared this recipe on TikTok, calling it “the perfect fuss-free” dish that you can whip up in under half an hour. She mentioned it’s become an “absolute staple” in her home since she first posted it last year.
So, what do you need? Here’s a quick list: a jar of butter beans, garlic, olive oil, cherry tomatoes, dried basil, a lemon, salt, pepper, cream cheese (or a vegan alternative), and some chopped spinach.
Making it is super simple. Just heat the oil and garlic in a pan until it smells amazing, then toss in the butter beans with their stock, the tomatoes, basil, salt, and pepper. Bring it to a boil, then let it simmer for about 10 to 15 minutes until everything thickens up and the tomatoes soften.
After that, stir in the cream cheese or vegan option along with the spinach, and squeeze in some lemon juice. Yasmin likes to top hers with fresh parsley and a drizzle of chili oil for a kick, but you can skip that if you prefer it milder.
